1. Beetroot juice

“A popular choice for many, mostly diabetics and those suffering from weakness, beetroot juice is a refreshing way to start your day,” tells the expert. Simply blend beets with a combination of other fruits and vegetables like carrots, oranges, or mint. Not only is it a nutrient-dense drink, but it also helps in detoxifying the body.

2. Beetroot paratha

This recipe can give your traditional parathas a nutritious twist. Grate beetroot and mix it with wheat flour, spices, and herbs of your choice. Roll out the dough and cook it on a pan. These reddish parathas can be a vibrant addition to your breakfast or lunch menu.

3. Beetroot salad

Salads are a great way to start your day on a nutritious note. “Dice beetroot into small pieces and toss it with other salad ingredients like cucumber, tomatoes, and feta cheese. Drizzle some olive oil and lemon juice, sprinkle some salt, and you have a refreshing beetroot salad ready,” suggests Dr Sisodia.

4. Beetroot soup (Borscht)

This soup recipe is inspired by Eastern European cuisine. This soup combines beetroot with vegetables like carrots, onions, and cabbage. Serve it hot or cold, it is the perfect healthy option for any weather. You can even add ingredients as per your taste.

5. Beetroot curry

“Blend beetroot into a smooth paste and cook it with spices like cumin, coriander, and turmeric. Add coconut milk or yoghurt to give it a rich, creamy texture. This curry goes well with rice or roti,” shares the expert.

6. Beetroot halwa

A delightful dessert option, beetroot halwa is made by slow-cooking grated beetroot in milk with sugar and ghee. Garnished with nuts and cardamom, it’s a treat for the taste buds, especially considering the upcoming festive season.

7. Beetroot pickle

Fermented foods have always been an integral part of Indian cuisine. Beetroot pickled in brine, vinegar, and spices can be a tangy accompaniment to your meals. It not only adds flavour but also has probiotic benefits.
